When talking about Khmer noodles, actually it should refer to the white shade and sticky objects made of rice, but it usually includes the soup.
If you call Khmer noodle in Cambodia, you might think about a yellow soup; the soup has its name, and today I will tell you, and also I will show you another soup, which is more traditional.

The yellow soup served with the noodle is named Proher. It is a popular one, and it is around Cambodia. You might think it is traditional Khmer noodle. Actually it is, but there is another, which is, like I mentioned above, more traditional than this one. It is called Kjeay.

Kjeay is the first version of Khmer noodle soup. It is not popular like Proher; it is hard to find, but it can still be found in some stores in the market.
Proher and Kjeay use the same cooking method, but Proher adds milk juice, while Kjeay does not.

I don’t know the year of birth of the soup or the history of the revolution. I tried to search for it, but I couldn’t find even a small amount of light.
What I write here is from my own research, but I cannot say it is accurate because it is a telling from people only. Even though I hope this can help you to know about the culture of Cambodia, especially the food.
Yum!
We love soup and noodles too.
Thank you for the information, because we hope to visit you someday.
