
It is not special food; it is a very simple and common food that my family and some Cambodian’s families love to cook and eat.
This food is originally a roasted pig. I bet you know it; therefore, I don’t need to talk about it.
In general, we have to buy a whole roasted pig or half roasted pig. Of course, we cannot finish it in just a day (unless you buy it to company with your alcohol). Even though we put it in the refrigerator, it is not fresh and it is not good. Hence, to keep the remaining roasted pig, we have to fry it.
To cook this food, we don’t need many ingredients and it is not complicated. Just put the pan on the cooker. When it is heated, put oil into it – just a little because the roasted pig is already oily and its oil will get out later. As the oil is hot, put the roasted pig, but don’t forget to cut it into average size pieces before you put it. Then you fry it until it becomes crispy. You can put salt or sugar if you want; it’s your own choice. As for my family, we don’t add anything. When we eat, if we think it is bland, we will use soybean sauce or fish sauce.
Besides easy cooking, this food can be kept for many days without needing to put it in the refrigerator or worry that it will be bad.
