
It’s one of the Khmer foods, and it’s a popular dish for Cambodian families at home. Khmer old people like this food. I don’t know why, but I like it too.
This kind of food is called a black pepper braise, and it uses only fish.
Mostly, Khmer people love to cook braise with a kind of fish that is small and does not have scales. Other ingredients are:
- pepper – raw, organic, and local, and my family always uses black pepper.
- fish sauce – which is salty.
- sugar – we don’t need much, but we need to add it to make the braise a little bit sweet.
- garlic – is used to reduce the smell of the fish.

You can visit Cambodia and go to Khmer restaurants, then look at their menu; I think some restaurants have it. But I want to remind you. The black pepper is so hot, but this food will not be delicious if it is not hot. Hence, be careful, please, when you eat it, and prepare a big glass of water near you before you eat it, and it should be cool water, not warm or hot water.
I think I would eat that fish because I like spicy food.
